Toad Fish and Chips Batter

This is enough fish batter for two people, plus some left-overs. We normally double when we have guests.
Fish Batter Ingredients:
- 3/4 cup flour
- 3/4 tsp baking power
- ½ tsp salt
- ½ tsp pepper
- 1 beaten egg (or powered egg replacer if you are low on eggs!)
- ½ cup beer
Prep:
- Mix the dry ingredients together in a pan to be used for dipping fish before frying.
- Add the egg (egg substitute) and beer. Add beer as required to make the fish and chip batter the consistency of a runny pancake batter. (Drink the remaining beer!)
You don’t need to dust the fish with flour before dipping into the batter. Just soak pieces in the batter and fry in hot oil.
I usually cut the fish into smallish chucks about 1 1/2 inch thick. I haven't tried making huge restaurant-sized pieces. Smaller ones are easier to not overcook.
Any onions lying about will make GREAT onion rings with the remaining batter!
